Peeps Popcorn Cake

Peeps and pastel M&M’s make this popcorn bundt cake a fabulous Easter centerpiece. I topped it with a few speckled chocolate eggs in keeping with the theme. Inspired by Lori Lange of Recipe Girl https://www.recipegirl.com/popcorn-cake/

12 cups popcorn, popped

½ cup butter

2 10-oz bags miniature marshmallows

1 Tbsp vanilla

10 oz pastel peanut M&M’s

3 oz pastel M&M’s

Peeps, bunnies, and chicks

Speckled chocolate eggs

Pop the popcorn and remove any unpopped kernels. In a large stock pan, melt the butter and marshmallows over low heat, stirring until smooth. Turn off the heat and stir in the vanilla and popcorn. Add in the M&M’s and peanut M&M’s and stir until incorporated. Butter a bundt pan and insert bunny and chick peeps in the pan upside down with faces toward the outer edge of the pan. Spoon the somewhat cooled popcorn mixture into the pan keeping the peeps in place. Allow to cool and set up at room temperature. When set or firm, turn the cake out of the bundt onto a cake plate or platter. The peeps should now be right-side up. Top with speckled egg
