Pumpkin Spice Chocolate Chip Bars

Decadent pumpkin spice bars with gooey chocolate chips are the taste of the season. They are very easy to make vegan by using coconut oil or stick vegan butter instead of dairy butter.

½ cup softened butter (or coconut oil for vegan) 

1 cup brown sugar

1 cup pumpkin

1 ½ Tbsp pumpkin spice seasoning

2 Tbsp pumpkin spice liqueur, optional

1 Tbsp vanilla

1 ¼ cups flour

½ tsp salt

1 cup dark chocolate chips


Preheat oven to 350*. Spray oil a 8” baking dish with oil and sprinkle with cinnamon sugar. In a mixing bowl, mix the butter, brown sugar, pumpkin, pumpkin spice seasoning, pumpkin spice liqueur (if using), and vanilla. When well combined, add flour, salt, and chocolate chips. Stir together with a rubber scraper until just combined. Spread evenly into the prepared baking dish. Bake for 25-30 minutes.
