Pumpkin n Spice Snickerdoodle Cookies

Pumpkin n spice are the flavors of fall and these amazing cookies are adapted from SkinnyTaste https://www.skinnytaste.com/skinny-pumpkin-spiced-snickerdoodles/. I added pumpkin to make them seem even more autumnal.
½ cup butter, softened
2 cups sugar
1 ½ tsp salt
1 tsp baking soda
1 tsp cream of tartar
1 tsp pumpkin spice
2 cups flour
2 Tbsp honey
2 tsp vanilla
2 eggs
½ cup pumpkin
Topping:
⅓ cup sugar
2 Tbsp pumpkin spice
Preheat oven to 375*. Cream butter and sugar in a stand mixer bowl on medium speed. Add in salt, soda, cream of tartar and pumpkin spice. Mix well to incorporate, add in flour, honey, vanilla, eggs and pumpkin, mix on low until incorporated. Mix topping ingredients in a pie plate. Using a 1 Tbsp scoop roll dough in topping mixture and then on a cookie sheet with spray oil or a silpat. Flatten cookies with a glass and bake for 7 minutes. Cool, makes enough to share!
