Raspberry Fool

Red raspberries and cloud-like layers of whipped cream with a drizzle of chambord over the top; so simple and elegant. Inspired by Holly of Beyond Kimchee https://www.beyondkimchee.com/raspberry-fool/ 


3 cups raspberries

4 Tbsp sugar, divided

¼ cup chambord or other raspberry liqueur

1 cup heavy cream

¼ cup sour cream or plain yogurt

1 tsp vanilla

Marinate raspberries in a mixing bowl with 2 tablespoons of the sugar and chambord. Whip cream with the remaining sugar, sour cream and vanilla to soft peaks. Whip in half of the raspberries until just mixed. Layer half of the raspberry whipped cream amongst 4 glasses, then a layer of berries and repeat the layers, spooning any leftover chambord juices over the top of the glasses.
