Rolo Oat Cookie Bars

Oat bar with rolo’s and chocolate chips; these cookie bars are the perfect bit of chewy with carmel and dark chocolate chips melting throughout. Inspired by the lovely Stephanie Dulgarian of Somewhat Simple blog spot. She doesn’t recommend turning this dough into cookie’s as it gets messy. I’d say if your so inspired, try placing a rolo in the middle of a tablespoon of dough instead of mixing them in to the main dough batch. https://www.somewhatsimple.com/rolo-cookie-bars/
1 cup butter, softened
1 ¼ cups brown sugar
1 tsp cinnamon, optional
1 tsp baking soda
½ tsp salt
2 eggs
2 Tbsp milk
2 tsp vanilla
1 ¾ cups flour
2 ½ cups old fashioned oatmeal
1 cup dark chocolate chips
1 cup rolo’s, unwrapped
1 cup pecans, chopped, optional
In a stand mixer, cream the butter and brown sugar for a couple of minutes. Add in the cinnamon, baking soda and salt. Mix thoroughly! Add in eggs, milk, vanilla and flour. Mix until just incorporated. Top with oats, chocolate chips, rolo’s and nuts (if using). Mix until just blended in. Line a 9.13 pan with foil or parchment paper, or just use spray oil. Spread dough evenly and bake for 20-25 minutes. Bars are done when golden brown and the edges are set.
Recipe can also be doubled and baked on a rimmed cookie sheet\jelly roll pan. The bowl gets full, so you may need to stir the last few turns of the dough with a rubber scraper or wooden spoon.
