Soft Pumpkin Spice Cookies with Chocolate Chips

Pumpkin spice cookies with dark chocolate chips and just the right amount of pumpkin spice. These cookies are so soft and vegan too. This amazing recipe was given to me by my friend Tanya along with a copy of the Junior League of Eugene, OR cookbook she was working on, Cooking from the Coast to the Cascades. A beautiful and thoughtfully designed cookbook using local ingredients.

1 29-oz can of pumpkin

3 cups brown sugar

1 ½ cups olive oil

1 Tbsp vanilla

1 Tbsp pumpkin spice

1 Tbsp baking powder

1 Tbsp baking soda

1 ½ tsp salt

5 ½ cups flour

2 cups dark/vegan chocolate chips

Preheat oven to 350*. In a stand mixer, mix pumpkin, brown sugar, olive oil, and vanilla together. Stir in pumpkin spice, baking powder, baking soda, and salt until completely stirred in. Mix in flour and chocolate chips until the dough comes together without any flour showing. Drop dough on a greased baking sheet with a tablespoon-sized scoop and bake for 15 minutes.
