Strawberry Bundt Cake With Strawberry Cream Cheese Icing

Strawberry heart bundt cake bursting with strawberry flavor and a lovely lemony strawberry cheesecake icing drizzle. Recipe uses a 10” bundt pan. Completely inspired by Jamielyn Nye of I Heart Nap Time. https://www.iheartnaptime.net/strawberry-sour-cream-cake/ 

1 cup butter, softened

2 cups sugar

3 eggs

1 lemon, zested

2 Tbsp lemon juice

2 ½ cups flour

½ tsp baking soda

½ tsp salt

1 cup sour cream

1 ½ cups fresh strawberries, diced


Strawberry Cream Cheese Icing:

8 oz cream cheese, softened

4 Tbsp butter, softened

5 Tbsp strawberry puree

2 Tbsp lemon juice

2 cups powdered sugar

½ tsp lemon extract, optional


Butter a 10” bundt pan and tap a tablespoon of flour through a small sieve to coat. Turn it over the sink to release excess flour.

Preheat oven to 375* (temperature will be reduced for baking). Cream butter and sugar in a stand mixer until fluffy. Add eggs one at a time on low speed. Mix in the lemon zest and lemon juice.

In a separate mixing bowl whisk the flour, baking soda and salt together. Pour all but ½ cup of the dry mix into the mixer and top with the sour cream. Mix until it just comes together. Pour the reserved ½ cup flour mixture into your diced strawberries. Mix strawberry mixture into the batter by hand with a rubber scraper until just mixed. Spread batter into the prepared bundt pan evenly. Reduce the oven temperature to 325* and bake for 60 to 65 minutes, a toothpick tester inserted in the middle of the cake will come out clean. Let the cake rest in the pan for 20 minutes before going around all edges with a small rubber scraper and turning out onto a serving board or platter. Allow to cool before icing.

Whip cream cheese and butter in a mixer until fluffy. Puree strawberries in a blender to equal 5 tablespoons and add into the mixer with the lemon juice, powdered sugar and lemon extract. Whip until blended. Drizzle icing over the cooled cake, reserving some to spoon over sliced cake at serving time. I like to fill the bundt cavity with extra sliced strawberries and serve them with the cake.
