Strawberry Lemon Bars

Lovely strawberry lemon bars with bite-sized pieces of strawberries roasted while they bake and drizzled with a strawberry glaze. Inspired by Sue Moran of The View from Great Island. Sue suggested 3 strawberries and her beautiful bars are fully iced. I used a couple of extra berries and drizzled my glaze more conservatively. ½ cup butter, softened
¾ cup sugar
1 egg
1 lemon, zested
¼ cup lemon juice
2 ¼ cups flour
½ tsp baking powder
½ tsp salt
1 cup strawberries, hulled and diced
Glaze:
1 cup powdered sugar
1 Tbsp lemon juice
3-5 medium sized strawberries
Preheat the oven to 350*. Line a 8” square pan with parchment and set a side. In a stand mixer, cream the butter and sugar until fluffy. Scrape down the bowl and add the egg, lemon zest and juice. Beat until mixed in. Whisk the flour, baking powder and salt together in a small mixing bowl and gently add to the mixer, mixing until just incorporated so as not to over-mix the flour. Stir in the strawberries by hand with a rubber scraper. Pour into the parchment lined baking dish and spread evenly. Bake for 30-35 minutes. The bars will be golden around the edges and a toothpick inserted will come out with moist crumbs.
Add powdered sugar, lemon juice and strawberries to a blender. Puree mixture and taste/correct for desired sweetness adding a bit more powdered sugar or lemon juice to your taste. Allow the bars to cool before drizzling the glaze or slathering over all as an icing.
