Vegan Strawberry Brownies

Vegan brownies made with coconut oil, fresh sliced strawberries, and just a hint of coffee. Inspired by Arman Liew of The Big Mans World https://thebigmansworld.com/vegan-brownies/ 

2 cups dark chocolate chips, divided

¼ cup coconut oil

3 Tbsp ground flax seeds

9 Tbsp coffee

¾ cup sugar

1 Tbsp vanilla

¾ cup flour

⅓ cup unsweetened cocoa powder

1 tsp espresso powder, optional

½ tsp salt

½ cup strawberries, sliced

Preheat oven to 350*. Spray oil an 8” square baking pan and set to one side. In a large pyrex or microwave-safe bowl, melt the coconut oil and 1 ½ cups chocolate chips for 1-2 minutes. Whisk in the flax seeds, coffee, and vanilla. Stir in the flour, cocoa, espresso powder, if using, and salt until just mixed. Mix strawberries and the remaining ½ cup chocolate chips. Spread into the prepared baking pan and bake for 30-35 minutes.
