Delicious and lightened up turkey spring rolls come together quickly in the air fryer. Serve with a bit of sweet n spicy chili sauce for a delicious treat. This is so much better than take out.
1 Tbsp olive oil
16 oz ground turkey
½ tsp salt
pepper , to taste
9 oz tri color slaw
2 green onions, diced
2 cloves garlic, minced
1 tsp ginger, minced
5 oz bamboo shoots, drained and diced
5 oz water chestnuts, drained and diced
1 tsp soy sauce
1 package spring roll wraps
Place foil on your air-fryer tray and spray with a bit of oil. In a large skillet over medium heat, sauté the turkey in the olive oil, stir in salt and pepper till turkey is cooked through, about 5 minutes. Remove skillet from heat and add the slaw mix, green onions, garlic, ginger, bamboo shoots, water chestnuts and soy sauce. Mixing together in the skillet gives the cabbage time to warm up and soften a bit and it will be less likely to puncture the wrap with any pointed edges. Place a couple of tablespoons of the mixture on the wrap, working with one wrap at a time. Use your finger tip to dampen the edges of the wrap with a bit of water. Fold up the bottom edge halfway covering, fold in sides, then roll up to the top and seal. Most packages have a diagram to aid in rolling the envelope shape. Place spring rolls on foil covered air fryer tray, spray with olive oil spray and air fry for about 5-6 minutes, turn and spray on the other side continuing to cook for another 5-6 minutes. They should be beautifully browned. Serve with a side of sweet n spicy chili sauce.
