Apple Almond Apricot Stilton Salad

Apple slices with candied almonds and white apricot stilton cheese crumbles tossed over butter lettuce and dressed with a fruity balsamic vinaigrette with apple (or pear) butter whisked right in.


1 head butter lettuce, chopped

1 apple, sliced

2 green onions, sliced

2 oz white apricot stilton, crumbled

¼ cup almonds, sliced (I like honey roasted from Trader Joes)


Dressing:

⅔ cup olive oil

⅓ cup balsamic vinegar (or fruity flavored)

¼ tsp dijon mustard

Garlic salt and pepper, to taste

1 tsp apple or pear butter, optional


Toss butter lettuce in a salad bowl, top with sliced apples, green onions, apricot stilton crumbles, honey roasted almond slices and drizzle with the vinaigrette. 

Whisk all dressing ingredients in a small mason jar and store in the fridge after serving.
