Avocado White Bean Herb Salad

Marinated Mediterranean-style white bean and avocado herb salad. Inspired by Yasmin Fahr in her cookbook Boards and Spreads.

1 15-oz can white beans, rinsed & drained

2 Tbsp olive oil, divided

2 cloves garlic, minced

¼ tsp salt 

Pepper, to taste

1 lemon, zested & juiced

5 oz mixed baby greens or arugula

1 red onion, sliced

2 avocados, sliced

3 oz feta, crumbles

¾ cup mixed herbs such as parsley, cilantro, mint, dill, basil, & mint 


Marinate the white beans with 1 tablespoon of olive oil, garlic, salt, pepper, and 1 tsp of lemon zest for a couple of hours. 

Lay baby greens or arugula on a platter and top with red onion, avocado, and feta cheese crumbles. Whisk 1 tablespoon olive oil, the other half of lemon zest, lemon juice, salt, pepper, and chopped herbs. Drizzle over the salad.
