BBQ Chicken and Onion Grilled Cheese

2 Tbsp olive oil

2 red onions, thinly sliced

3 cloves garlic, minced

4 chicken thighs

½ tsp paprika

1 cup bbq sauce


Garlic Butter Grilled Cheese:

¼ cup butter, softened

2 cloves garlic, minced

2 tsp parsley, minced

8 slices sourdough

4 slices havarti cheese

4 slices mozzarella cheese


In a large skillet, stir olive oil and onions over medium heat for about 10 minutes. Add in garlic, chicken, & paprika. Cook for about 4 minutes per side or until chicken is cooked through. Shred chicken with 2 forks or by stirring in a stand mixer with the paddle attachment. Return chicken to the skillet and add in the bbq sauce. Turn heat off and cover with a lid. 

Mix butter, garlic and parsley together and butter the bread slices on one side. Place buttered side down on a preheated-griddle at 325 or a large skillet on medium heat. Top with havarti cheese, bbq chicken n onions then mozzarella and another slice of bread. Turn when golden so the other side also gets golden delicious. Serve with love!
