Beefy Tostadas

Delicious ground beef tostadas with refried beans, slaw, tomatoes, avocado, sliced olives, and casero cheese on a fried corn tortilla shell. Garnish with sour cream, guacamole, cilantro, and lime wedges.
12 corn tortilla shells
Olive or avocado oil, for frying
1 lb ground beef
1 onion, diced
3 cloves garlic, minced
2 cups refried beans
16 oz tri-color coleslaw
½ cup cilantro
3 green onions, sliced
1 tomato, diced
1 avocado, diced
½ cup sliced black olives
3 oz casero cheese, crumbled
Olive oil, a drizzle
4 limes, divided
Sour cream
Guacamole
Salsa verde
In a large skillet, fry tortillas for a couple of minutes per side until they are golden brown and crispy. Remove to a paper towel-covered plate and keep warm. Remove all but one tablespoon of the oil and sauté onions until translucent. Stir in the hamburger and garlic, frying until the meat is cooked through; season with salt and pepper. Heat the beans through in a skillet or in the microwave. Toss coleslaw, green onions, and cilantro in a bowl with a drizzle of olive oil, the juice of 2 limes, salt, and pepper. To serve, layer beef and beans on a fried tortilla, and top with slaw, tomatoes, avocado, olives, cheese, sour cream, guacamole, and salsa as desired. Serve with additional limes cut into wedges.
