Blueberry Pear Burrata Salad

Blueberry salad with burrata cheese, cucumbers, pear slices, toasted almonds, and green onion dressed with a blueberry caramelized red onion vinaigrette. You could add croutons and sauteed chicken tenders to make this a complete meal in one.

5 oz mixed baby greens

½ English cucumber, sliced

1 cup blueberries 

2 green onions, sliced

1 burrata ball of cheese, sliced

½ cup toasted sliced almonds or pumpkin seeds

1 pear, sliced 

Blueberry Vinaigrette:

½ red onion 

½ cup blueberries 

¾ cup olive oil

¼ cup champagne vinegar 

2 Tbsp honey or more to taste

1 tsp Dijon mustard 

Salt and pepper, to taste 

Mix baby greens, cucumber, green onion, and blueberries in a salad bowl. Slice burrata cheese into quarters and lay on top. Sprinkle with sliced almonds or toasted pumpkin seeds. Add slices of pear around the outside edge of the bowl.

In a medium-sized skillet, caramelize the red onion over medium-low heat. When the onion is softened and fully caramelized, add the blueberries and stir for one more minute. Remove from the heat and scrape into a blender. Measure olive oil, champagne vinegar, and honey, then pour it into the blender. Add Dijon mustard, salt, and pepper. Blend until smooth and emulsified. Drizzle over the salad and pear slices.
