Caprese Mac n Cheese

16 oz pasta shells, elbows or your favorite pasta

4 Tbsp butter

4 Tbsp flour

1 cup heavy cream

2 ½ cups milk

16 oz mozzarella cheese, shredded or if using fresh, sliced

½ tsp garlic salt

½ tsp salt

Pepper, to taste


3 roma tomatoes, diced

½ cup fresh basil, rolled and sliced into chiffonade spirals

Cook pasta according to package directions and drain. Stir butter and flour together in a large skillet over medium-low heat for about 2 minutes. Add in the cream while stirring, then the milk. Stir in the mozzarella, garlic salt, salt and pepper until the cheesy sauce comes together, taste and correct for seasoning. Pour over piping hot pasta. Top with diced tomatoes and basil.
