Cheeseburger Pasta Soup

Comforting creamy cheesy burger and mushroom soup is hearty and satisfying.
1 Tbsp olive oil
1 onion, diced
1 cup mushrooms, sliced
1 lb hamburger
7 cloves garlic, minced
1 tsp italian seasoning
1 tsp oregano
Salt and pepper, to taste
1 16-oz can diced tomatoes
2 cups water
1 cup anellini, or your favorite smallish pasta
1 cup heavy cream
1 cup shredded mexican cheese, or cheddar
½ cup sour cream
¼ cup fresh basil, chopped for garnish
Saute olive oil, onion, and mushrooms together in a dutch oven or soup pot over medium heat until the onion is translucent. Add in the hamburger, garlic, and seasonings. Cook, stirring for a couple of minutes. Stir in the tomatoes, water, and pasta. Cook for 15 minutes or until the pasta is done. Stir in the cream, cheese, and sour cream. Heat through and serve in bowls with extra cheese on top and some chopped basil.
