Chicken Broccoli Mac n Cheese

Chicken and broccoli enrich this decadent mac n cheese pasta dish. Tangy with a bit of garlic, sour cream, and sharp cheddar cheese.


16 oz pasta shells or macaroni, cooked per directions 

12 oz broccoli, cooked

2 Tbsp olive oil

1 red onion, diced 

4 chicken thighs, dried between paper towels

Salt and pepper, to taste

3 cloves garlic, minced 

1 cup chicken broth

½ cup heavy cream 

1 cup sour cream 

1 cup cheddar, shredded 

Fill a large pot of water and bring to a boil. Cook the pasta for about 5 minutes, add in the broccoli, and cook another 5-7 minutes or until the pasta is cooked al dente and the broccoli is cooked to your preference (I like it al dente as well). Drain pasta and broccoli when done. Preheat a large skillet with olive oil, add onion, and chicken seasoned with salt and pepper. Cook over medium heat for about 4 minutes per side or until the chicken is done all the way through. Add in the garlic, chicken broth, cream, drained pasta and broccoli, sour cream, and cheddar cheese. Taste and correct for seasoning before serving.
