Chicken Ginger Rice Cooker Congee

Congee with bone-in chicken, ginger, and lemon flavor this favorite Chinese rice porridge. It cooks in the rice pot on the porridge setting within about an hour and is pure comfort food. Stir in more water or broth for your desired consistency. Rice will continue to absorb liquid, so leftovers will need to have more water or liquid added.

4 bone-in chicken thighs, remove the skin

2 cups short-grain rice

1 quart chicken stock

9 cloves garlic, minced

3 slices ginger, about the size of a coin

2 tsp salt

½ lemon, cut into slices

Freshly ground black pepper, for serving

2 green onions, sliced for garnish

Place chicken, rice, chicken stock, garlic, ginger, salt, and lemon slices in the rice pot and set it to the porridge setting. When the rice is done cooking, remove the chicken to a plate and shred the chicken, discarding the bones. Remove and discard lemon and ginger slices and stir the chicken back into the rice. Enjoy garnished with freshly ground black pepper and green onions, or other favorite toppings.
