Chicken Gloria

Glorious chicken with mushrooms in a creamy gravy, topped with melty muenster cheese is perfect with rice. Inspired by Natasha of Salt and Lavender https://www.saltandlavender.com/chicken-gloria/
6 chicken thigh pieces (or 3 chicken breasts, sliced in half lengthwise)
Salt and pepper, to taste
1 Tbsp olive oil
4 Tbsp butter, divided
8 oz cremini mushrooms, sliced
3 cloves garlic, minced
½ cup sherry
3 Tbsp flour
1 ½ cups heavy cream
6 slices muenster cheese
1 Tbsp parsley or green onions, for garnish
Preheat oven to 375*. Preheat the skillet over medium-high heat with olive oil and 1 tablespoon of butter. Dry chicken in paper towels, salt and pepper them, and add to the preheated skillet. Cook for 3 minutes, then turn the chicken pieces over. Add the mushrooms to the skillet along with one more tablespoon of butter. Cook for another 3 minutes, then remove the chicken to a 9.13 baking dish. Pour sherry into the mushrooms, lowering the heat to medium, and cook for 1 minute to absorb. Add the remaining 2 tablespoons of butter to the skillet with flour and garlic, whisk into a slurry, and cook for 1 minute. Drizzle the heavy cream in while whisking and cook until a nice gravy has thickened. Pour mushrooms and gravy over the chicken. Top chicken pieces with muenster cheese and bake for 20 minutes or until chicken is cooked through and the cheese is lightly golden brown. Remove from the oven and garnish with parsley or green onions.
