Chicken Tenders with Peanut Sauce

2 lbs chicken tenders
2 Tbsp soy sauce
3 cloves garlic, minced
1 Tbsp ginger, grated
1 Tbsp brown sugar
1 Tbsp fish sauce
1 Tbsp yellow or green curry powder
2 Tbsp olive oil
2 small zucchini, sliced into thick rounds
¼ tsp salt
Freshly ground black pepper, to taste
1 lime, cut into wedges
¼ cup cilantro, chopped
3 green onions, chopped
½ cup salted roasted peanuts
½ cup mung bean sprouts
basil leaves, for garnish
Peanut Sauce:
½ cup peanut butter
¼ cup sweet chilli sauce
2 Tbsp soy sauce
1 lime, zested and juiced
1 tsp ginger, freshly grated
Up to ¼ cup water, to thin
Place chicken tenders in a baking dish or ziplock bag and add soy sauce, garlic, ginger, brown sugar, fish sauce, and curry powder. Place in the fridge and marinate for a couple of hours or overnight.
In a large skillet, preheat olive oil adding chicken tenders (discard the marinade). Cook for 2 minutes, over moderate heat, then turn chicken over and add the zucchini, salt, and pepper, and cook for 2-3 minutes longer, until the chicken is done to 165* in the thickest part.
Whisk the peanut sauce ingredients together in a small bowl or glass measurer.
Serve chicken on a platter with zucchini, garnish with green onions, cilantro, limes, peanuts, mung beans, basil, a small bowl of peanut sauce, and rice if you like.
