Cod Poached in Coconut Cream Over Acini de Pepe

1 Tbsp olive oil
1 lemon, sliced
3 cloves garlic, minced
1 Tbsp ginger, minced
3 pieces cod fish
Salt and pepper, to taste
1 14-oz can coconut cream
2 Tbsp fresh dill or 2 tsp dried dill
1 lb acini de pepe pasta, cooked
2 green onions, sliced for garnish
In a large skillet over medium-low heat, stir olive oil, garlic, and ginger for 1 minute, until fragrant. Arrange lemon slices strategically in the skillet, salt, and pepper the cod on both sides, and place the fish on top of the lemon slices. Spoon the coconut cream in the skillet around the fish and add the dill. Baste the top of the fish with the melted coconut cream until the fish is cooked through, about 4-7 minutes depending on the size of the fillet. Lift lemon slices with fish on top of the cooked acini de pepe in pasta bowls with a generous ladle of poaching liquid on top. Garnish with extra dill and green onions.
