Crispy Orange Beef

Crispy strips of beef in a spicy orange sauce with broccoli served over rice is delicious and quick to make. Have your ingredients out and prepped to go before cooking. 1 ½ lbs flank steak, sliced into strips

⅓ cup sugar

⅓ cup rice wine vinegar

3 cuties or tangerines, zested and juiced (or 1 orange)

1 Tbsp soy sauce

1 tsp salt

¼ tsp red pepper flakes

2 cups avocado or peanut oil, for frying

¼ cup cornstarch

3 Tbsp ginger, freshly grated

3 cloves garlic, minced

1 head broccoli, cut into coins and florets

Pot of rice, for serving over

Cook a pot of rice in a rice cooker or over the stovetop. Mix sugar, rice wine vinegar, tangerine zest, tangerine juice, soy sauce, salt, and pepper flakes in a small bowl, and set this sauce to one side. Heat the oil in a wok or large skillet over medium-high heat. Place the cornstarch in a bag with the flank steak and shake to coat. Fry flank steak in the hot oil until crispy and golden brown. Remove the steak to a paper towel-covered platter. Remove all but 1 tablespoon of oil from the wok or skillet. Fry the ginger, and garlic for 1 minute. Add in the tangerine sauce, and broccoli. Cook for 5 minutes, stir in the beef for 1 minute or until everything is hot and coated with sauce, then remove from heat and serve over rice.
