Crock Pot Roast with Bella Mushrooms

Tender chuck pot roast with bella mushrooms, onions, baby creamer potatoes, and carrots simmer in a rich broth all day in the crock pot. Inspired by Chungah at Damn Delicious https://damndelicious.net/2019/04/12/slow-cooker-pot-roast/ 

1 Tbsp olive oil

3-4 lb chuck pot roast

Salt and pepper, to taste

1 Tbsp onion powder

1 tsp garlic salt

3 bay leaves

2 sprigs fresh thyme

1 quart beef broth

1 tsp worcestershire

1 cup red wine

½ cup flour

2 Tbsp tomato paste

2 onions, cut into bite-sized chunks

2 lbs baby creamer potatoes

3 cloves garlic, minced

3 stalks celery, chopped

2 carrots, chopped

12 oz baby bella mushrooms, halved

2 Tbsp parsley

Place oil, roast, salt, pepper, onion powder, garlic salt, bay leaves, thyme, beef broth, and worcestershire sauce in the crock pot. Whisk red wine, flour, and tomato paste together. Add to the crock pot and stir in. Add the onions, potatoes, garlic, celery, carrots, and mushrooms. Cook on low for 10 hours.

Horseradish Cream:

½ cup whipping cream

½ cup mayonnaise

½ cup horseradish

2 Tbsp dijon mustard

Salt and pepper, to taste

Whisk all ingredients in a mason jar; sauce will keep for a couple of weeks in the fridge.
