French Onion Chicken

The most flavorful chicken thighs with caramelized french onions and gruyere cheese broiled on top. Delicious over rice! Inspired by Gina Homolka of Skinny Taste https://www.skinnytaste.com/french-onion-chicken/ 



2 tsp olive oil

2 onions, sliced thin

1 Tbsp balsamic vinegar

½ Tbsp worcestershire sauce

1 tsp fresh thyme leaves or ½ tsp dried

½ cup white wine or chicken broth

2 tsp butter

4 chicken thighs

Salt and pepper, to taste

1 cup gruyere cheese, grated

In a large skillet over medium-low heat, stir onions in the olive oil, sprinkle in ¼ tsp salt, and let them cook for 2-5 minutes until they brown around the edges. Add in the balsamic and worcestershire sauce and stir occasionally for 20-25 minutes until the onions are very tender. Deglaze the pan with ½ cup wine or broth stirring for a couple of minutes to scrape up any bits, the onions will absorb most of the liquid fairly quickly. Push the onions to the outside of the pan and add the butter with what’s left of the liquid. Add the chicken to the middle of the pan and salt and pepper them. Cook for 3-4 minutes a side. When they are nearly done, top them with the cheese and set them under the broiler for a couple of minutes until the cheese is melted and a bit golden brown.
