French Onion Rice

French onion rice is a fragrant stove-top rice dish with caramelized onions topped with gruyere cheese melted on top. Inspired by Rose of Nish Kitchen https://nishkitchen.com/french-onion-rice/
3 onions, diced
3 Tbsp olive oil
6 Tbsp butter, divided
3 cloves garlic, minced
4 cups beef stock
2 cups short grain or basmati rice
½ tsp salt
Pepper, to taste
1 cup gruyere cheese, grated
Caramelize the onions in olive oil and 3 tablespoons of the butter in a large saute pan over medium-low heat stirring occasionally, for about 20 minutes, or until golden brown. Add the remaining 3 tablespoons of butter, garlic, beef stock, rice, salt, and pepper. Stir together until the mixture comes to a boil, reduce heat to a simmer, and cook over low heat with a lid until the liquid is absorbed and the rice is tender, about 20-30 minutes. Turn off the heat and top rice with gruyere cheese, top with a lid, and let rest for 10 minutes and letting the cheese get melty.
