Garlic Butter Chicken Thighs

4 skinless chicken thighs, dry between paper towels
1 tablespoon olive oil
5 cloves garlic, minced
1/4 cup butter, divided
2 Tbsp parsley, chopped
Preheat a large cast iron or heavy bottomed skillet with the olive oil and one tablespoon of the butter to medium high heat. Add the well dried chicken thighs and cook for 5-6 minutes a side. Test for doneness, chicken should be 165* with a thermometer reading or looking to see that there is no pink if cutting into the thickest part of the meat. Remove cooked chicken from the skillet to a serving platter and stir the butter and garlic into the pan. Cook for about 1 minute until garlic and butter are lightly browned. Pour over the chicken and top with the parsley garnish.
