Garlic Shiitake Roasted Fingerling Potatoes

Garlic butter roasted fingerling potatoes with shiitake mushrooms. These little crispy gems cook hot and quickly. Inspired by Jo at jocooks https://www.jocooks.com/recipes/roasted-fingerling-potatoes/  


1 lb fingerling potatoes, halved

4 tbsp butter, melted

3 cloves garlic, minced

2 tsp italian seasoning

½ tsp salt

½ tsp pepper, freshly ground

1-2 cups shiitake mushrooms, sliced

1 tbsp olive oil

1 tbsp parsley, chopped


Preheat oven to 425*. In a medium mixing bowl, toss the potatoes in the butter, garlic and seasonings. Pour olive oil in a cast iron or heavy heat proof skillet and add the seasoned potatoes. Top with the shiitake mushrooms and bake for 20-25 minutes or until cooked through and crispy. Top with parsley garnish and serve.
