Greek Zoodle Salad

Greek zucchini noodle salad with beautiful red onion rings, kalamatas, cherry tomatoes, cucumbers and feta...all the Greek flavors we know and love. Inspired by Allrecipes https://www.allrecipes.com/recipe/241792/greek-zoodle-salad/ 


1 zucchini, spiralized

2 green onions, sliced

 2 cocktail cucumbers, sliced

1 pint cherry tomatoes, halved

½ red onion, cut into thin rings

¼ cup kalamata olives, halved

3 oz feta, crumbled


Red Wine Vinaigrette:

⅔ cup olive oil

⅓ cup red wine vinegar

1 Tbsp dijon

½ tsp oregano

Salt and pepper, to taste


Whisk all vinaigrette ingredients together in a 2 cup mason jar. Can be shaken just before serving.


In a salad bowl, layer the zoodles, green onions, cucumber, cherry tomatoes, onion rings, kalamata olives and feta. Drizzle with the vinaigrette and toss ingredients to coat.
