Halibut with Parmesan Caper Mayonnaise

Halibut is amazing, moist and delicious with lemon, caper mayonnaise and a crusty parmesan top. Broiled in the oven makes it a quick and easy dish to prepare. The caper mayonnaise keeps the halibut from drying out as it has a reputation for.
1 lb halibut fish filets, thawed
Salt and pepper, to taste
½ lemon, a squeeze
3 Tbsp butter, melted
3 Tbsp mayonnaise
2 tsp capers
2 cloves garlic, minced
Hot sauce, a dash
⅓ cup parmesan cheese, grated
1 Tbsp parsley, chopped
Place fish filets in a baking dish and season with salt and pepper. Squeeze some lemon over the top. In a small mixing bowl, mix the butter, mayonnaise, capers, garlic and hot sauce together. Spread mixture evenly over the fish. Broil for 6 minutes, then pull rack out and spread the cheese on top, continue cooking for another 6 minutes. Check for doneness. The middle of the fish will be white and flakey rather than opaque, if not quite done, broil a few more minutes watching carefully. Top with parsley before serving.
