Italian Artichoke Chicken with Mozzarella

Juicy Italian style artichoke, tomato and mozzarella topped chicken that effortlessly cooks in the oven. Inspired by Aaron and Jill at AaronandJillW http://aaronandjillw.blogspot.com/2011/08/italian-chicken.html 

8 chicken thighs, boneless\skinless

Salt and pepper, to taste

12 oz artichoke antipasto (or artichoke hearts, drained and chopped)

2 roma tomatoes, chopped

3 cloves garlic, chopped

½ tsp oregano

8 oz fresh mozzarella, sliced 

Basil, chopped for garnish

Preheat oven to 350*. Salt and pepper chicken thighs on both sides. Lay in an 8” baking dish. Top with artichokes, tomatoes, garlic and oregano. Bake for 25-30 minutes or until nearly done; chicken should register 165* when done on an insta-thermometer. Top with mozzarella and broil 2-4 minutes or until beautiful. Garnish with basil just before serving.
