Mahi Mahi in Lemon Garlic Caper Sauce

Delicious pan seared mahi mahi fillets with a lemon garlic caper sauce. Soo good and the butter sauce was great over a side of mashed potatoes as well. Inspired by Jessica Randhawa of The Forked Spoon https://theforkedspoon.com/mahi-mahi-recipe/ 


4 mahi mahi fillets

1 Tbsp olive oil

Salt, garlic salt & pepper, to taste

2 lemons, thinly slice 1 and juice 1

5 cloves garlic, minced

4 Tbsp butter

1 Tbsp capers, drained

2 Tbsp parsley or cilantro, chopped

Press fish between paper towels to remove moisture and season. In a medium-sized skillet, preheat olive oil over medium-high heat. Add seasoned fillets and cook about 2-3 minutes a side, checking to see that they are done. The outside will be golden, flakey and opaque colored in the middle. Remove fish to a serving platter and keep warm. Juice one lemon and thinly slice the other lemon, removing seeds as you slice to keep them thin, then quarter the slices. Reduce heat to low and add juice to the skillet along with garlic and scrape up any browned bits with a spatula. Add butter and capers and cook for about 1 minute. Pour sauce over fish fillets and garnish with lemon sliced quarters and parsley or cilantro.
