Margherita Pearl Couscous

Pearl couscous cooked with diced tomatoes, mozzarella cheese pearls, and basil. This is a quick, simple, and flavorful side dish.  

1 ½ cups water 

½ tsp salt 

1 Tbsp butter

1 cup pearl couscous 

1 15-oz diced tomatoes 

1 cup mozzarella pearls

Salt and pepper, to taste

Fresh basil, for garnish


Heat water, salt, and butter over moderate heat in a medium-sized saucepan until the water comes to a boil. Stir in couscous, turn the heat low, and cover with a lid. Cook for 4 or 5 minutes until liquid has been mostly absorbed. Stir in tomatoes, cheese, salt, pepper, and basil, and stir over low heat until warm and ready to serve.
