Meatloaf Mashed Potato Cupcakes
Oh the comfort food of homemade meatloaf, topped with whipped cream cheese mashed potatoes in the whimsical shape of cupcakes.

1.5 lbs ground hamburger
½ cup onion, chopped
3 cloves garlic, minced
¼ cup A1 steak sauce
1 egg
¼ tsp garlic salt
Freshly ground pepper, to taste
¼ tsp thyme
Allspice, a sprinkle
6 Tbsp Carolina Gold BBQ sauce
Preheat oven to 375*. Mix the hamburger, onion, garlic, A1, egg and seasonings together until well mixed. Measure ⅓ cup portions and press into 6 large muffin tin wells. Brush with 1 Tbsp of BBQ sauce and bake for 20-25 minutes. Pipe hot whipped potatoes on top to resemble iced cupcakes (recipe for mashed potatoes can be cut in half).
Cream Cheese Mashed Potatoes:
7 XL potatoes (14 if using smallish potatoes)
8 oz cream cheese
½ cup butter
1+1 ½ tsp salt, divided
Peel and cut potatoes into 1-2 inch slices. Cover with water and boil till tender in a soup pot with 1 tsp salt over a medium high heat. Put cream cheese, butter and 1 tsp salt in a stand mixer and let soften to room temperature while the potatoes boil. When ready whip till fluffy and creamy. Taste for seasoning and add up to ½ tsp more salt if needed.
