Mediterranean Roasted Cauliflower a True Foods Copycat

Roasted cauliflower with a spicy tahini harissa sauce is topped with sticky dates, pistachios and fresh herbs. Amazingly delicious recipe barely adapted from Her Modern Kitchen which was inspired by True Food Kitchen.



1 head cauliflower, cut into florets

2 Tbsp olive oil

2 garlic cloves, diced

½ tsp salt

Pepper, to taste

⅓ cup tahini

½ a lemon juiced

1 Tbsp harissa 

4 Tbsp vegetable broth

3 dates, diced

⅓ cup pistachios

2 Tbsp fresh mint, chopped

2 Tbsp fresh dill, chopped


Preheat oven to 450*. Layer cauliflower, olive oil and garlic in a 9.13 baking dish. Stir in salt and pepper and bake for 25 minutes. Meanwhile whisk together in a small glass measurer the tahini, lemon juice, harissa and broth. Pour over roasted cauliflower and toss to mix. Top with dates, nuts and herbs. Serve warm.
