Nectarine Burrata Salad

Nectarines (or peaches) and burrata cheese with balsamic vinaigrette over mixed baby greens are delicious and beautiful.  It’s so amazing, you may forget your eating salad. Enjoy this summer salad many times over while stone fruits are still in season.

2 cups spring mix baby lettuces

2 green onions, sliced

2 nectarines or peaches, sliced or diced

1 burrata cheese, torn into pieces

¼ cup olive oil

½ tsp. dijon mustard

2 Tbsp fruit flavored balsamic (I had plum and have used peach before)

Garlic salt & pepper, to taste

Layer green onions and nectarines (peaches) over a bed of baby greens, top with burrata pieces. Mix olive oil, dijon,balsamic and seasonings together. Drizzle over salad.
