Parsleyed Potatoes

Tender boiled baby potatoes bathed in a parsley butter sauce (and because it’s me green onions too). These little spuds are so good! Inspired by Heidi of Foodie Crush https://www.foodiecrush.com/buttery-parsley-potatoes/ 

2 lbs baby potato medley

¼ cup butter

¼ cup parsley

2 green onions

Salt and pepper, to taste

Rinse potatoes and cut any larger potatoes in half; with a potato peeler, slice away a ring of peel from around the potatoes (sheerly decorative). Cover baby potatoes with water in a dutch oven or large pot. Cook over medium-high heat about 15-20 minutes or until fork tender. Drain the water off and quickly stir in the butter, parsley, green onions, salt, and pepper. Serve nice and hot.
