Pear Almond and Gorgonzola Salad with Balsamic Vinaigrette

Juicy ripe pears, honey glazed almonds and gorgonzola cheese over baby greens are generously drizzled with a lovely fruity vinaigrette.


2 bartlett pears, 1 diced/ 1 sliced

5 oz mixed baby greens

2 green onions, sliced

2 oz gorgonzola cheese, grated or crumbled

¼ cup sliced almonds, I used honey glazed almonds from Trader Joes


Vinaigrette:

⅔ cup extra virgin olive oil

⅓ cup pear balsamic vinegar, or another fruit flavor (I’ve also used elderberry)

¼ tsp dijon mustard

Garlic salt and pepper, to taste

Mix up vinaigrette ingredients in a mason jar. Shake or ladle over salad, refrigerating any leftovers for another time.

Arrange baby greens in a large salad bowl. Scatter diced pear, green onions, gorgonzola and almonds on top. Arrange sliced pear around edges and drizzle with vinaigrette just before serving.
