Petrale Sole with Lemon Butter

Petrale sole fillets with a lovely lemon butter sauce. This quick dinner cooks in about 5 minutes. Pairs great with a pot of rice, couscous, or orzo, and steamed broccoli.

½ cup flour

1 Tbsp onion salt

Pepper, to taste

1 Tbsp avocado oil

4 fillets petrale sole

4 Tbsp butter

1 lemon, divided

1 Tbsp capers, optional

1 Tbsp green onion, optional


Mix flour, onion salt and pepper together on a plate. Heat the oil in a skillet over medium high heat. Dredge fish fillets in the flour and cook for about 2 minutes per side. Remove from the pan and keep warm. Turn off the heat and add butter to the pan swirling to melt. Slice the lemon in half lengthwise and squeeze half into the skillet avoiding the seeds. Replace the fish into the skillet and coat each side with the lemon butter. Plate the fish and garnish with capers and green onion as desired. Cut the other lemon half into wedges for serving.
