Pumpkin Rosemary Cream Gnocchi

Prep Time: 15 mins | Cook Time: 10 mins | Course: Dinner | Servings: 4

Pumpkin gnocchi in a rosemary butter cream sauce with parmesan cheese. I love seeing new products from Trader Joe’s, and these cook up so quick, easy, and deliciously.

14 oz pumpkin gnocchi (I found at Trader Joe’s)

2 Tbsp butter

1 large sprig rosemary

2 Tbsp pumpkin puree

1 cup heavy cream

Salt and pepper, to taste

Fresh nutmeg, a sprinkle

¼ cup grated parmesan cheese

In a large skillet, sauté rosemary leaves in the butter, stirring for a couple of minutes. Add in the pumpkin, cream, and gnocchi. Cover with a lid and cook for 3 minutes over medium heat. Stir in the salt, pepper and nutmeg. Sprinkle parmesan over the top.
