Red Butter Lettuce Raspberry Salad

Beautiful red butter lettuce leaves with raspberries, goat cheese, sesame cashews, pumpkin seeds, green onions, and a raspberry vinaigrette.

5 oz baby red butter leaves

2 green onions, sliced

6 oz raspberries

3 oz goat cheese, crumbles

¼ cup sesame cashews or other favorite nuts

2 Tbsp pumpkin seeds

Olive oil, a drizzle

Salt and pepper, to taste

Raspberry vinegar, a drizzle

Layer butter lettuces, green onions, raspberries, goat cheese, nuts, and pumpkin seeds in a salad bowl. Drizzle with olive oil, and sprinkle with salt, and pepper. Toss leaves with tongs to coat the salad. Drizzle with the raspberry vinegar and toss again.
