Roasted Cabbage Wedge Salad with Creamy Miso Dressing

Roasted cabbage wedges with charred edges and a creamy miso dressing.
1 head cabbage
1 head red cabbage
2 green onions, chopped
Olive oil, a generous drizzle
Salt and pepper, to taste
Creamy Miso Dressing:
2 Tbsp white miso paste
2 Tbsp rice wine vinegar
2 Tbsp toasted sesame oil
2 Tbsp plain kefir or yogurt
2 Tbsp mayonnaise
1 Tbsp sesame seeds
1 Tbsp grated ginger
1 Tbsp fish sauce
2 cloves garlic, minced
3 Tbsp green onions finely minced, white part only
Salt and pepper, to taste
Cut cabbages in half, then into wedges. Drizzle with olive oil and sprinkle with salt and pepper. Broil until the cabbage edges get crispy browned, about 12-15 minutes. Whisk miso dressing ingredients together and drizzle over the crispy wedges. Top with green onions.
