Salsa Verde Sour Cream Rice

Rice is the perfect side to add flavor too; sour cream, salsa verde and cheese really add a special flavor to this side dish.  It makes tacos sing!


2 cups short or long grain rice 

4 cups water

1 tsp. salt

Pepper, to taste

2 Tbsp. butter

½ cup salsa verde

½ cup sour cream

1 cup cheddar cheese or pepper jack cheese, shredded


Cook rice, water, seasoning, and butter over medium-low heat with a lid for 30 minutes or until just al dente.  Turn off the heat and stir in salsa verde and sour cream.  Top with cheese shreds and replace the lid.  Let steam with the burner turned off for 10 minutes longer. Can also be made in a rice cooker.
