Stracciatella Pesto Mashed Potatoes

Pesto and stracciatella (or burrata filling) mashed potatoes with green onions are flavorful and delicious. If you can’t find the filling; cut the burrata ball into smallish pieces and whip in with the hot potatoes.

1 ½ lbs baby red potatoes, halved if large

½ cup butter 

8 oz stracciatella or burrata filling (@Trader Joes)

½ cup pesto

2 green onions, sliced 

2 tsp salt, divided

Milk, a splash for desired consistency 

Freshly cracked black pepper, to taste 

Cover potatoes with cold water in a stock pot, adding ½ teaspoon salt. Cook over medium-high heat until done and pierces easily with a fork, about 10 minutes. Drain potatoes and mash in a stand mixer with butter, stracciatella, pesto, 1 ½ teaspoons salt, and pepper to taste. Drizzle in a splash of milk as needed for desired consistency or texture while mixing on low. Whip until fluffy.
