Strawberry Caesar Salad

Strawberry Caesar salad; a spring twist on the classic. Have I gone too far… Or not far enough?
1 head romaine lettuce, chopped or slivered lengthwise
1 pint strawberries, hulled and halved
3 green onions, chopped
Parmesan cheese, freshly grated
Salt and pepper, to taste
Layer of Romain, strawberries, green onions, and Parmesan cheese in a salad bowl or platter. Sprinkle with salt and pepper and drizzle with strawberry Caesar salad dressing.
Strawberry Caesar Salad Dressing:
1 egg
3 cloves garlic
½ cup Parmesan cheese, grated
1 Tablespoon Worcestershire sauce
1 anchovy or 1” anchovy paste
¼ teaspoon salt and freshly ground pepper
1 lemon zested
¼ cup freshly squeezed lemon juice
½ cup olive oil
1 cup strawberries, hulled
1 Tablespoon strawberry jam, optional
Add egg, garlic, Parmesan cheese, Worcestershire sauce, anchovy, salt, pepper, lemon zest, lemon juice to a blender. Blend until emulsified, then very slowly drizzle in the olive oil. Add strawberries and a bit of jam if the strawberries aren’t very sweet or flavorful. Blend until smooth and pour over salad.
