Sugar Crusted Skillet Cornbread with Green Chiles

This is my favorite cornbread, It is light and airy and is inspired by The Silver Palate Girls. I added a sugar crust and green chiles, cooking it in a cast iron skillet to be reminiscent of a local grills cornbread appetizer. 

1 cup cornmeal

1 cup flour

¼ cup sugar

2 tsp baking powder

¼ tsp salt

1 cup buttermilk

6 Tbsp butter, melted

1 egg

4 oz green chiles

2 Tbsp sugar (for topping)

Preheat oven to 375* Whisk together in a large mixing bowl the cornmeal, flour, ¼ cup sugar, baking powder and salt. In a small bowl mix the buttermilk, melted butter, egg and green chiles together. Fold into the dry ingredients until just combined. Spray a 10 inch cast iron skillet with cooking spray and smooth batter into the pan. Top with 2 Tbsp sugar and bake for about 25 minutes.
