Sweet and Sour Chicken

Sweet and sour chicken is even better at home! Fruit cocktail juice makes the sweet and sour sauce easy and delicious. Just add a pot of rice to make this an at home Chinese night. Inspired by Jaden Hair at Simply Recipes https://www.simplyrecipes.com/recipes/sweet_and_sour_chicken/
1 lb boneless skinless chicken thighs or breast meat cut into 1” chunks
1 Tbsp cornstarch
½ tsp salt
2 Tbsp olive oil
1 onion, diced into 1” chunks
3 mini sweet peppers, diced into 1” chunks
1 tsp ginger, fresh grated\micro-planed
1 15-oz fruit cocktail, juice reserved
1 cup pineapple tidbits or chunks, frozen or canned and drained
Sweet and Sour Sauce:
⅔ cup fruit cocktail juice
⅔ cup apple cider vinegar
⅔ cup ketchup
1 tsp cornstarch
⅓ cup brown sugar
½ tsp salt
Toss chicken chunks with cornstarch and salt, refrigerate while prepping the rest of the ingredients. Mix sweet and sour sauce ingredients in a saucepan with a whisk over medium low heat until thickened. Taste for flavors and correct any adjustments to your liking. In a large skillet over medium high heat, stir fry the chicken in the olive oil for 2-3 minutes, add in the veggies and stir fry for another 2-3 minutes until the chicken is done and the veggies are cooked but not overly so. Add in the fruit cocktail, pineapple and about ½ of the sweet and sour sauce. Reserve the rest of the sauce for at the table. Serve over or with rice.
