Sweet Chili Brussel Sprouts

Caramelized brussel sprouts get a sweet heat kick from garlic chili sauce and honey, sprinkled with sesame seeds. I like to clean and cut the brussels in half early on and let dry on a paper towel so they have plenty of time to dry. They’ll need to be completely dry before going into the hot skillet. 2 Tbsp olive oil
1 lb brussel sprouts, halved
1 Tbsp sesame oil
1 Tbsp honey
1-2 Tbsp garlic chili sauce
3 cloves garlic, minced
½ tsp salt
1 Tbsp sesame seeds
Preheat the olive oil over medium-high heat in a large cast iron or heavy-bottomed skillet and place brussel sprout halves face down in it. You can layer a few left as a second layer if needed. Allow to caramelize for 4-7 minutes, the brussels will be nicely browned. Stir a bit to get as much of the top layer to the bottom of the skillet as possible and cook another 3 minutes. Whisk the sesame oil, honey, garlic chili sauce, garlic, and salt together. Pour over the brussels and stir to coat. Cook for 2-3 minutes before removing from the heat. Sprinkle with sesame seeds.
