Thai Cucumber Salad

Delicious crunchy cucumber salad with cilantro, red onion, and peanuts. Drizzled with a dressing of sweet chili sauce and apple cider vinegar. Inspired by Bee Yinn Low at rasamalaysia https://rasamalaysia.com/thai-cucumber-salad/ 


1 lb Persian cucumbers, sliced 

¼ tsp salt

¼ red onion, sliced

½ cup carrot shreds

½ cup celery, sliced

½ cup mung bean sprouts

2 Tbsp roasted peanuts, chopped

1 Tbsp cilantro, chopped

4 Tbsp sweet chili sauce

1 Tbsp apple cider vinegar


Mix the cucumbers and salt and strain in a colander. Layer red onion, carrot, celery, mung beans, peanuts, and cilantro in a salad bowl. Add in the drained cucumbers and toss. Whisk the sweet chili sauce and apple cider vinegar together, and drizzle over the salad.
