Tomato Cream Chicken Pasta

Angel hair pasta in a delicate tomato cream sauce with chicken thighs, basil and fresh mozzarella.

1 Tbsp olive oil

1 onion, diced

4 chicken thighs

3 cloves garlic, minced

½ tsp oregano

Salt and pepper, to taste

Pepper flakes, a pinch, optional

1 28-oz can crushed tomatoes

½ cup heavy cream

12 oz angel hair pasta, cooked

8 oz ciliegine mozzarella balls

¼ cup fresh basil, for garnish

 


In a large skillet over medium heat, stir olive oil and onion for 2 minutes. Add in the chicken, garlic, oregano, salt and pepper. Cook for 3-4 minutes per side. Add in a pinch of pepper flakes, tomatoes and heavy cream, cooking for 2 minutes. Stir in cooked pasta, mozzarella balls and basil.
